Icing

  • 1 cup powdered sugar

Instructions
 

Preparation

  • In a large bowl, whisk together the flour, baking powder, and salt. In another bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla, mixing well. Gradually add the dry ingredients, mixing until combined. Divide the dough in half, wrap in plastic, and chill for 30 minutes.
  • Mix the cinnamon and brown sugar in a small bowl. Roll each dough half into a rectangle on a floured surface. Sprinkle with the cinnamon mixture, then roll up tightly and slice into cookies.

Serving

  • Preheat the oven to 350°F. Arrange cookies on a parchment-lined baking sheet. Bake for 10-12 minutes until edges are golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.
  • Mix powdered sugar, milk, and vanilla to create icing. Drizzle over cooled cookies to serve.
