Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or non-stick spray, then lightly flour it.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Peel, core, and chop the apples into small pieces. Gently fold the apples into the batter until evenly distributed.
  • Transfer the prepared batter into the greased and floured cake pan, spreading it evenly with a spatula.
  • Place the cake in the preheated oven and bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.
  • Slice the cooled cake into 8 pieces and serve warm or at room temperature, optionally topped with whipped cream or ice cream.
  • Store any leftover cake in an airtight container at room temperature for up to three days. For longer storage, refrigerate or freeze as needed.
