Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar

  • 1 tbsp ube extract

Ube Frosting

  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tbsp ube extract
  • 2 tbsp milk

Instructions

Preparation

  • In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in the ube extract.
  • In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Spoon the batter into prepared cupcake liners, filling each about two-thirds full.
  • Bake in a preheated oven at 350°F (175°C) for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Serving

  • Once the cupcakes are completely cool, prepare the frosting by beating softened butter until creamy. Gradually add powdered sugar, beating until smooth. Mix in ube extract and milk, beating until light and fluffy. Pipe or spread the frosting onto cooled cupcakes.

Storage

  • Store frosted cupcakes in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days. Allow them to reach room temperature before serving.
