  • 1 Mixing Bowl large
  • 1 blender or food processor

Ingredients

Dry Ingredients

  • 1/2 cup cocoa powder
  • 1 cup almond flour
  • 1/2 cup protein powder
  • 1/2 tsp baking soda

Wet Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract

Optional Add-ins

  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped walnuts

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 9x9 inch baking pan by lining it with parchment paper or greasing it lightly.
  • Peel and cube two medium sweet potatoes. Steam or boil until tender, then mash until smooth.

Mixing the Batter

  • In a large mixing bowl, whisk together cocoa powder, almond flour, protein powder, and baking soda.
  • In a blender or food processor, combine mashed sweet potatoes, maple syrup, melted coconut oil, eggs, and vanilla extract. Blend until smooth.
  • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. If desired, fold in dark chocolate chips and walnuts.

Baking

  • Transfer the batter to the prepared baking pan, spreading it evenly with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Serving

  • Allow the brownies to cool in the pan for at least 10 minutes before slicing into 12 pieces. Serve warm or at room temperature.

Storage

  • Store any leftover brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Notes

Pro Tips: Use organic ingredients for the best flavor. Let the brownies cool completely before slicing to ensure clean cuts. Ingredient Substitutions: Use oat flour instead of almond flour for a nut-free version. How to Serve: Pair with ice cream or whipped cream for a decadent treat. Storage & Freshness: Keep in an airtight container to maintain freshness. Make-Ahead Tips: Prepare the batter and refrigerate overnight for a quick bake the next day.
