  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan with butter or non-stick spray.
  • In a large mixing bowl, combine cherries, granulated sugar, cornstarch, vanilla extract, and salt. Stir until the cherries are evenly coated with the mixture.
  • Pour the cherry filling into the prepared cake pan, spreading it out evenly.
  • In another bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy. Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk together all-purpose flour and baking powder. Gradually add to the wet mixture, mixing until just combined.
  • Drop spoonfuls of the sugar cookie dough over the cherry filling, spreading it slightly to cover most of the surface.
  • Place the pan in the preheated oven and bake for 40 to 50 minutes, or until the topping is golden brown and the cherry filling is bubbly.
  • Allow the cobbler to cool in the pan on a wire rack for at least 15 minutes before serving.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
