Ingredients
  

Pie Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter chilled and cubed
  • 1/4 cup ice water
  • 1/4 teaspoon salt

Strawberry Filling

  • 2 cups fresh strawberries hulled and sliced
  • 1/2 cup granulated sugar

Strawberry Gel Topping

  • 1 cup fresh strawberries pureed
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water
  • A few drops of lemon juice

Preparation

  • Preheat your oven to 375°F (190°C). Prepare your pie crust by rolling it out and fitting it into a 9-inch pie pan. Trim the edges and set aside.
  • In a large mixing bowl, combine the sliced strawberries and granulated sugar. Allow them to sit for about 15 minutes to macerate.
  • In a saucepan over medium heat, combine the strawberry puree, sugar, cornstarch, and water. Stir constantly until the mixture thickens and becomes clear. Remove from heat and stir in lemon juice.
  • Spoon the macerated strawberries into the prepared pie crust. Pour the gel topping over the strawberries, spreading it evenly.
  • Place the pie in the preheated oven and bake for 50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Allow the pie to cool to room temperature, then refrigerate for at least 4 hours to set the gel topping.
  • Slice the pie and serve chilled, optionally with whipped cream or ice cream for added indulgence.
  • Cover the pie with plastic wrap and store in the refrigerator for up to 3 days. For longer storage, freeze slices in airtight containers.
