Ingredients
  

Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 2-3 tbsp ice water

Filling

  • 1 cup strawberries hulled and sliced
  • 1 cup mixed berries blueberries, raspberries

Glaze

  • 1/4 cup strawberry preserves
  • 1 tbsp water
  • 1/2 tsp gelatin powder

Preparation

  • Preheat your oven to 350°F (175°C). Prepare the tart pan by greasing and flouring it to prevent sticking.
  • In a large mixing bowl, combine the flour, sugar, and salt. Add the cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough holds together.
  • Roll out the dough on a floured surface and fit it into the tart pan. Prick the bottom with a fork, then bake for 20-25 minutes until golden. Allow to cool completely on a wire rack.

Assembly

  • Wash and dry the berries thoroughly. Slice strawberries and mix with other berries in a bowl to combine.
  • Spread a layer of strawberry slices on the cooled crust, then arrange the mixed berries on top in a decorative pattern.

Glaze

  • In a small saucepan, heat the strawberry preserves with water over low heat until smooth. Stir in the gelatin until dissolved.
  • Use a pastry brush to apply the glaze over the berries. Let the tart set at room temperature for at least 30 minutes before serving.

Serving and Storage

  • Cut the tart into 8 slices and serve immediately. Store leftovers in the refrigerator for up to 3 days.
