Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup sourdough starter unfed

Mix-ins

  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 cup graham cracker crumbs

Instructions
 

Preparation

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter with the brown sugar and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture and beat well. Then, mix in the sourdough starter until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the mini marshmallows, chocolate chips, and graham cracker crumbs until evenly distributed throughout the dough.
  • Chill the dough in the refrigerator for at least 1 hour to enhance the flavors and texture.
  • Using a cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
