Instructions
 

Preparation

  • Preheat oven to 350°F. Line a muffin pan with cupcake liners. In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat softened butter and sugar until creamy. Add eggs one at a time, mixing well, then stir in vanilla extract.
  • Gradually add dry ingredients to the wet mixture, alternating with milk, beginning and ending with the flour mixture. Gently fold in diced strawberries.
  • Spoon batter into cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool on a wire rack.
  • Beat softened butter until smooth. Gradually add powdered sugar. Mix in strawberry puree, vanilla extract, and a pinch of salt until smooth and creamy.
