Equipment

  • 1 electric mixer
  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs room temperature
  • 1 tbsp pure vanilla extract

Instructions

Preparation

  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until well combined.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If the dough is too sticky, chill for 15-20 minutes.
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop tablespoons of dough, roll into balls, and place them on the prepared baking sheet about 2 inches apart.

Serving

  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers remain soft. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Serve the cookies warm or at room temperature. They pair well with a cup of tea or coffee for a delightful treat.

Storage

  • Once cooled, store the cookies in an airtight container at room temperature for up to a week. To maintain freshness, place a slice of bread in the container to help absorb moisture.
