Equipment

  • 1 9-inch round cake pan greased and floured
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 cup milk

Frosting

  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 2-3 tbsp milk

Instructions

Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan to prevent sticking.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, use an electric mixer to cream the butter and sugar until light and fluffy, about 3-4 minutes.
  • Beat in eggs one at a time, then stir in vanilla and almond extracts. Gradually add dry ingredients alternately with milk, mixing until just combined.
  • Pour batter into the prepared pan. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serving

  • In a mixing bowl, beat softened butter until creamy. Gradually add powdered sugar, beating until smooth. Stir in vanilla and almond extracts, then add milk to reach desired consistency.
  • Once the cake is completely cool, spread frosting evenly over the top and sides. Garnish with sliced almonds if desired.

Storage

  • Store the cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze for up to 3 months.

Notes

Pro Tips: Ensure all ingredients are at room temperature before starting. Cream the butter and sugar thoroughly for a light and fluffy cake. Do not overmix the batter to avoid a dense texture. Use high-quality vanilla and almond extracts for the best flavor.
Ingredient Substitutions: For a gluten-free version, use a 1:1 gluten-free flour blend. Substitute butter with a plant-based alternative and milk with almond milk for a dairy-free option.
How to Serve: Pair with coffee, almond milk, or herbal tea. Decorate with fresh berries or edible flowers for special occasions.
Storage & Freshness: Store at room temperature for up to 3 days, refrigerate for up to a week, or freeze for up to 3 months.
Make-Ahead Tips: Bake the cake a day in advance and frost it just before serving for optimal freshness.
