  • 1 cup granulated sugar

  • 1 tsp vanilla extract
  • 1/4 cup strawberry puree
  • Red food coloring optional

Preparation

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the strawberry puree and food coloring if using. Chill the dough for at least 30 minutes.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll tablespoon-sized portions of dough into balls and place them on the prepared baking sheet, spaced 2 inches apart. Bake for 10-12 minutes, or until the edges are set and the centers appear slightly underbaked.
