Preparation

  • Wash, hull, and dice the strawberries. In a small saucepan, combine with 1 tablespoon of sugar and cook over medium heat until syrupy. Allow to cool.
  • In a bowl, sift together all-purpose flour, baking powder, and cocoa powder. Set aside.
  • In a large mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined. Gently fold in the cooled strawberry mixture.
  • Grease and flour a 9-inch round cake pan. Pour the brownie batter into the prepared pan and spread evenly.
  • Preheat oven to 350°F (175°C). Bake the brownies for 40-45 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Serving

  • Allow brownies to cool in the pan for 10 minutes before transferring to a wire rack. Slice into wedges and serve with ice cream or whipped cream if desired.
