  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring

  • 1 cup white chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, use an electric mixer to cream the softened butter with granulated and brown sugars until light and fluffy, about 2-3 minutes.
  • Add the egg, vanilla extract, and red food coloring to the butter mixture, mixing until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. If using, fold in white chocolate chips.

Baking

  • Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are just slightly underbaked.

Serving and Storage

  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Store cooled cookies in an airtight container at room temperature for up to one week.
