Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 electric mixer optional

Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp cinnamon

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Add-ins

  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Instructions

Preparation

  • In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the oats and raisins.
  • Cover the dough with plastic wrap and chill in the refrigerator for at least 15 minutes. This will help the cookies hold their shape during baking.

Serving

  • Preheat the oven to 350°F. Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes, or until the cookies are golden around the edges. Let cool slightly before serving. Enjoy with a glass of milk or your favorite beverage.

Storage

  • Once cooled completely, store the cookies in an airtight container at room temperature for up to a week. You can also freeze the cookies for up to three months. Thaw at room temperature before serving.
