  • 2 cups confectioners' sugar

  • 2 tbsp heavy cream

Preparation

  • Preheat your oven to 350°F. Line a muffin tin with cupcake liners. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the honey and vanilla extract until fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  • Spoon the batter into the prepared muffin tin, filling each liner about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Serving

  • While the cupcakes are cooling, prepare the frosting. Beat together the softened butter and confectioners' sugar until smooth. Add the vanilla extract and heavy cream, beating until light and fluffy. Once the cupcakes are completely cool, spread or pipe the frosting onto each cupcake.
