Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 tsp vanilla extract

Preparation

  • In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
  • In another bowl, using an electric mixer, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully incorporated.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  • Cover the dough and refrigerate for at least 30 minutes to firm up.
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, until the edges are set but the centers appear soft.

Serving

  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
