  • 8 oz cream cheese softened

  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Preparation

  • In a large mixing bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg until well combined.
  • In another bowl, beat together granulated sugar, brown sugar, and vegetable oil until creamy. Add eggs one at a time, mixing well after each addition. Stir in grated carrots and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix the batter.
