Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract

Add-ins

  • 1 cup rainbow sprinkles

Instructions

Preparation

  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the sprinkles, being careful not to overmix. Cover the dough and chill for at least 30 minutes to prevent spreading during baking.

Baking

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Using a tablespoon or cookie scoop, drop rounded dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.

Serving

  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Serve warm or store for later enjoyment.

Storage

  • Store cooled cookies in an airtight container at room temperature for up to one week. For longer storage, freeze cookies in a sealed bag for up to three months.
