Ingredients

  • 1 cup almond butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts

Preparation

  • In a large mixing bowl, combine the almond butter, sugar, egg, baking soda, vanilla extract, and salt. Blend with an electric mixer until smooth. Fold in optional add-ins if using.
  • Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes.

Serving

  • Preheat the oven to 350°F. Use a cookie scoop to place dough balls onto a lined baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve once completely cooled.
