Equipment

  • 1 9-inch round cake pan greased and floured
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Graham Cracker Base

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter melted
  • 2 tbsp granulated sugar

Brownie Batter

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1 cup semi-sweet chocolate chips

Topping

  • 1 1/2 cups mini marshmallows

Instructions

Preparation

  • Set your oven to 350°F (175°C) to ensure it's hot when you're ready to bake.
  • In a small bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of a greased 9-inch round cake pan.

Make the Brownie Batter

  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
  • In a separate bowl, whisk together flour, cocoa powder, and baking powder. Gradually add this to the wet mixture, mixing until just combined. Fold in the chocolate chips.

Assemble and Bake

  • Pour the brownie batter over the graham cracker base, smoothing the top with a spatula. Sprinkle mini marshmallows evenly over the top.
  • Place the pan in the preheated oven and bake for 30-35 minutes or until the marshmallows are golden brown and the brownie is set.

Serving and Storage

  • Allow the brownies to cool completely in the pan before slicing them into 8 pieces. Serve as is or with a scoop of vanilla ice cream.
  • Keep any leftover brownies in an airtight container at room temperature for up to 3 days.
