Crust

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter melted

  • 1 cup powdered sugar
  • 1/2 cup root beer concentrate
  • 1 1/2 cups heavy cream
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup root beer soda
  • 1 tsp vanilla extract

Preparation

  • Combine the chocolate cookie crumbs with melted butter. Press into a 9-inch pie pan to form an even layer. Refrigerate to set.
  • In a large bowl, beat the softened cream cheese and powdered sugar until smooth.
  • Add root beer concentrate and vanilla extract to the cream cheese mixture, mixing until fully incorporated.
  • In a separate bowl, whip the heavy cream until soft peaks form. Gently fold into the cream cheese mixture.
  • Melt the semi-sweet chocolate chips and stir in root beer soda until smooth. Allow to cool slightly.
  • Pour the cooled chocolate mixture over the crust. Spread the cream cheese filling evenly on top.
  • Cover the pie with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Garnish with chocolate shavings or whipped cream before serving.
  • Keep any leftovers refrigerated, covered, for up to 3 days.
