Crust

  • 2 cups vanilla wafer crumbs
  • 1/2 cup unsalted butter melted

  • 1/4 cup root beer extract
  • 2 large eggs

  • 2 tbsp powdered sugar

Preparation

  • Preheat your oven to 350°F. Grease a 9x13 inch baking dish.
  • In a large bowl, mix the vanilla wafer crumbs with melted butter until well combined. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
  • In a mixing bowl, combine the sweetened condensed milk, root beer extract, and eggs. Use an electric mixer to beat the mixture until smooth and well combined.
  • Pour the filling over the crust, spreading it out evenly with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until the filling is set and slightly golden on top.
  • Allow the bars to cool completely in the pan on a wire rack before topping.
  • In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  • Spread the whipped cream over the cooled bars. Optionally, sprinkle with additional wafer crumbs or a drizzle of root beer syrup.
