Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 electric mixer

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 3/4 cup unsalted butter softened
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract

Add-ins

  • 1 cup semi-sweet chocolate chips
  • 12 soft caramel candies

Instructions

Preparation

  • In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the semi-sweet chocolate chips, ensuring they are evenly distributed throughout the dough.
  • Cover the dough and chill in the refrigerator for at least 30 minutes to firm up the dough and enhance the flavors.

Baking

  • Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
  • Take a tablespoon of chilled dough and flatten it slightly. Place a caramel candy in the center and wrap the dough around it, rolling into a ball.
  • Place the cookies on the prepared baking sheet, leaving ample space between each one. Bake for 10-12 minutes or until the edges are golden brown.

Serving

  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Serve warm for the best gooey caramel experience.

Storage

  • Store any leftovers in an airtight container at room temperature for up to 5 days. For longer storage, freeze the cookies for up to 3 months.
