  • 1 1/2 cups crushed chocolate wafer cookies

  • 3 large eggs
  • 8 oz dark chocolate melted and cooled
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Preparation

  • Preheat your oven to 325°F (163°C).
  • Combine the crushed chocolate wafer cookies and melted butter in a bowl and mix until evenly coated. Press into the bottom of a 9-inch springform pan.
  • In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and cocoa powder, mixing until well combined. Add eggs one at a time, beating after each addition. Stir in melted chocolate and vanilla extract, followed by sour cream.
  • Pour the chocolate filling over the prepared crust, smoothing the top with a spatula.
  • Bake in preheated oven for 50 minutes or until center is set but still slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour. Remove and let cool to room temperature before refrigerating.
  • Refrigerate the cheesecake for at least 4 hours or overnight to set.
