Brownie Base

  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 1 cup all-purpose flour

  • 4 large eggs

Cheesecake Layer

  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar

Raspberry Swirl

  • 1 cup fresh raspberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Instructions
 

Preparation

  • Preheat the oven to 350°F. Grease a 9x13-inch baking pan. In a large bowl, mix melted butter and sugar until smooth. Add eggs one at a time, then vanilla. In a separate bowl, combine flour, cocoa, and salt. Gradually add to the wet mixture until just combined. Spread in the prepared pan.
  • In another bowl, beat the cream cheese and sugar with an electric mixer until smooth. Mix in eggs and vanilla until combined. Spread evenly over the brownie base.
  • Combine raspberries, sugar, and lemon juice in a saucepan. Heat until raspberries break down, then puree. Strain to remove seeds. Drop spoonfuls over cheesecake layer and swirl with a skewer.
  • Bake in the preheated oven for 45-50 minutes or until the cheesecake layer is set and lightly golden. Cool in the pan before transferring to the refrigerator to chill for at least 2 hours.

Serving

  • Once chilled, cut the brownies into slices. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for added indulgence.
