Equipment

  • 1 muffin tin lined with paper liners
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 cup canned pumpkin puree
  • 1 tsp vanilla extract

Decorations

  • Green frosting
  • Candy pumpkins
  • Edible glitter

Instructions

Preparation

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  • In another bowl, cream the softened butter and sugar using an electric mixer until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the pumpkin puree and vanilla extract until fully combined.
  • Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. The batter should be smooth with no lumps.
  • Divide the batter evenly among the lined muffin cups, filling each approximately two-thirds full. Bake in a preheated oven at 350°F for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove the cupcakes from the oven and let them cool in the pan for 5 minutes. Transfer to a wire rack to cool completely before decorating.

Serving

  • Once cooled, use green frosting to pipe vines and leaves on the top of each cupcake. Place candy pumpkins to create a pumpkin patch effect. Add a sprinkle of edible glitter for a magical touch.

Storage

  • These cupcakes can be stored in an airtight container at room temperature for up to 3 days. For longer storage, place them in the refrigerator.
