Preparation

  • Preheat your oven to 350°F and grease a 9-inch round cake pan. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the pumpkin puree and vanilla extract until smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • In a small bowl, combine the flour, brown sugar, and ground cinnamon for the crumb topping. Pour the melted butter over the mixture and stir until it forms a crumbly texture. Set aside.
  • Pour the cake batter into the prepared cake pan and smooth the top with a spatula. Evenly sprinkle the crumb topping over the batter.
  • Place the cake in the preheated oven and bake for 25 minutes. After 25 minutes, check the cake and add the crumb topping if you haven't already. Continue baking for an additional 25 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

  • Once the cake is completely cooled, slice it into 8 pieces. Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
