Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 cookie scoop

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup protein powder vanilla or chocolate
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1 large egg room temperature
  • 1 tsp vanilla extract

Optional Add-ins

  • 1/4 cup dark chocolate chips
  • 1/4 cup chopped nuts

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the flour, protein powder, baking powder, and salt. Stir until well mixed.
  • In another bowl, whisk together the almond butter, honey, egg, and vanilla extract until smooth and creamy.
  • Gradually add the dry mixture to the wet ingredients, stirring until a thick dough forms. Fold in any optional add-ins.
  • Cover the bowl and chill the dough in the refrigerator for at least 30 minutes to help the cookies hold their shape during baking.
  • Use a cookie scoop to portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with the back of a spoon.
  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Do not overbake to maintain a chewy texture.

Serving

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack. Serve warm or store as desired.

Storage

  • Store the cooled cookies in an airtight container at room temperature for up to a week, or freeze for longer preservation.
