Equipment

  • 1 cupcake tray lined with cupcake liners
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup finely ground pistachios
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Frosting

  • 1/2 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 2 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 cup finely chopped pistachios

Instructions

Preparation

  • In a large mixing bowl, combine flour, sugar, ground pistachios, baking powder, baking soda, and salt. Whisk together to blend.
  • In another bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined. Divide the batter evenly among the cupcake liners, filling each about two-thirds full. Bake at 350°F for 18-20 minutes, or until a toothpick inserted comes out clean.

Serving

  • For the frosting, beat together softened butter and cream cheese until smooth. Gradually add powdered sugar, then heavy cream and vanilla extract. Fold in chopped pistachios.
  • Once cupcakes are cooled, generously spread the frosting on top of each. Decorate with whole pistachios or extra chopped pistachios as desired.

Storage

  • Store unfrosted cupcakes in an airtight container at room temperature for up to 2 days. Frosted cupcakes should be refrigerated and consumed within 4 days.
