Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract

Add-ins

  • 1 cup crushed peppermint candies
  • Optional: 1 cup white chocolate chips

Instructions

Preparation

  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and peppermint extracts.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the crushed peppermint candies and any optional add-ins.
  • Cover the dough and chill in the refrigerator for at least 30 minutes to enhance the flavor and prevent spreading during baking.

Baking

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Using a cookie scoop, drop dough balls onto the prepared baking sheets, leaving about 2 inches of space between each cookie. Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Serving

  • For a festive touch, drizzle or dip cookies in melted white chocolate and sprinkle with additional crushed peppermint candies before serving.

Storage

  • Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze the cookies in a zip-top bag for up to 3 months.
