Preparation

  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla and peppermint extracts.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in optional add-ins if using.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
