  • 2 ripe pears peeled, cored, and diced

Instructions
 

Preparation

  • In a large bowl, whisk together the flour, baking powder, ground cardamom, and salt. Set aside.
  • In another bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Gently fold the diced pears into the batter using a spatula, ensuring they are evenly distributed.

Serving

  • Once cooled, slice the cake and serve with a dusting of powdered sugar or a simple glaze if desired.

  • Place the remaining cake in an airtight container at room temperature for up to three days. Alternatively, wrap tightly and freeze for longer storage.
