Equipment

  • 1 9-inch round cake pan greased and floured
  • 1 electric mixer
  • 1 Mixing Bowl large

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsweetened cocoa powder

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs room temperature
  • 1 cup buttermilk
  • 2 tsp vanilla extract

Ganache

  • 8 oz dark chocolate chopped
  • 1 cup heavy cream

Frosting

  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/3 cup cocoa powder
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

Preparation

  • In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  • In another bowl, cream the butter and sugars together until light and fluffy. Add the eggs one at a time, mixing well after each addition, then mix in the buttermilk and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Divide the batter evenly between the prepared cake pans. Bake at 350°F for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on a wire rack.
  • Place the chopped dark chocolate in a heatproof bowl. Heat the cream in a saucepan over medium heat until it just begins to simmer. Pour the hot cream over the chocolate and let it sit for 5 minutes. Stir until smooth and glossy.
  • Beat the butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing until smooth. Add milk and vanilla extract, mixing until the frosting reaches a spreadable consistency.

Serving

  • Place one cake layer on a serving plate. Spread a layer of ganache on top. Place the second cake layer on top and spread frosting over the top and sides of the cake. Decorate as desired.
  • Slice the cake into 8 pieces and serve with ice cream or a warm beverage like coffee.

Storage

  • Store leftover cake in an airtight container in the refrigerator for up to 5 days. Allow slices to come to room temperature before serving.
