  • 1 cup granulated sugar
  • 2 large eggs room temperature

  • 1/2 cup milk

Preparation

  • Preheat your oven to 350°F and line a mini muffin tin with paper liners.
  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the butter and sugar with an electric mixer until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  • If using, fold in the lemon zest and blueberries gently to distribute evenly.

Baking

  • Spoon the batter into the lined muffin tin, filling each about two-thirds full.
  • Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from oven and let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
