Cupcake Batter

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.

Peach Filling

  • In a small bowl, toss the diced peaches with lemon juice and sugar. Set aside to let the flavors meld.

Cobbler Topping

  • In a medium bowl, combine flour, brown sugar, melted butter, and cinnamon. Mix until the mixture resembles coarse crumbs.

Assembling and Baking

  • Spoon the cupcake batter into the prepared liners, filling each about halfway. Add a spoonful of the peach filling on top of the batter and sprinkle with cobbler topping.
