Cookie Base

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Cream Cheese Spread

  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Fruit Toppings

  • 1 cup strawberries sliced
  • 1 cup kiwi peeled and sliced
  • 1/2 cup blueberries
  • 1/2 cup mandarin oranges segmented

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet. Flatten each ball slightly with the bottom of a glass or your hand.
  • Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.

Prepare the Toppings

  • In a medium bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Set aside.
  • Wash and slice the strawberries and kiwi. Segment the mandarin oranges and set aside all the fruit toppings.

Assemble the Cookies

  • Once the cookies are completely cool, spread a generous layer of the cream cheese mixture onto each cookie. Top with an assortment of the prepared fruits, arranging them in a visually pleasing manner.
  • Serve the mini fruit pizza cookies immediately or refrigerate until ready to serve. Enjoy the delightful combination of textures and flavors.
