Ingredients
  

Tart Shells

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Berry Filling

  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and ensure your mini tart pans are greased.
  • In a large mixing bowl, combine flour, sugar, and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs.
  • Press the dough mixture into the greased mini tart pans, ensuring an even layer on the bottom and sides. Prick with a fork to prevent puffing.
  • Bake the tart shells for 10-12 minutes or until golden brown. Remove from oven and let them cool in the pans.

Berry Filling

  • In a saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook until the berries release their juices and the mixture slightly thickens, about 5-7 minutes.
  • Remove the berry mixture from heat and let it cool completely before filling the tart shells.

Assembly

  • Once the shells and filling have cooled, spoon the berry mixture into each tart shell, filling them generously.
  • Refrigerate the filled tarts for at least 30 minutes to set the filling. Serve chilled for the best flavor.
