Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 cup mango puree
  • 1 tsp vanilla extract

Passionfruit Frosting

  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1/4 cup passionfruit puree

Preparation

  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans. Set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  • In another bowl, use an electric mixer to cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Mix in the mango puree and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  • Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  • In a medium bowl, beat together the cream cheese, butter, and powdered sugar until smooth. Add the passionfruit puree and mix until well combined.
  • Place one cake layer on a serving plate. Spread a layer of frosting on top, then place the second cake layer on top. Frost the top and sides of the cake with the remaining frosting.
  • Serve the cake immediately or store in an airtight container in the refrigerator for up to three days.
