Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Rolling Pin
  • 1 cookie cutter with a smaller cutter for windows

Ingredients

Cookie Ingredients

  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon

Wet Ingredients

  • 3/4 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Filling

  • 3/4 cup raspberry jam
  • powdered sugar for dusting

Instructions

Preparation

  • In a medium bowl, whisk together the all-purpose flour, almond flour, salt, and cinnamon.
  • In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add the egg and vanilla extract, beating until incorporated.
  • Gradually add the dry ingredients to the wet mixture, mixing until a dough forms. Wrap the dough in plastic wrap and chill for 30 minutes.
  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Roll out the dough to about 1/8 inch thickness on a floured surface. Use a cookie cutter to cut out shapes and a smaller cutter for the top cookies to create windows.
  • Place cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are golden. Let cool completely.

Serving

  • Spread a small amount of raspberry jam on the bottom cookies. Top with the windowed cookies, pressing lightly to sandwich them together. Dust with powdered sugar before serving.

Storage

  • Store in an airtight container at room temperature for up to one week. For longer storage, freeze unassembled cookies and fill them with jam before serving.
