  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Instructions
 

Preparation

  • Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the lemon zest and juice, followed by the dry ingredients and poppy seeds, mixing until just combined.
  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  • In a medium bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, beating until the mixture is light and fluffy. Stir in the vanilla extract and lemon juice until well combined.
  • Place one cake layer on a serving plate. Spread a generous amount of frosting over the top. Place the second cake layer on top and cover the entire cake with the remaining frosting. Smooth the frosting with a spatula.
