  • 4 cups powdered sugar
  • 1/4 cup coconut milk

Instructions
 

Preparation

  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
  • In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, use an electric mixer to cream the butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition.
  • Mix in lemon zest and juice. Gradually add the dry ingredients, alternating with coconut milk, until the batter is smooth.
  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
  • In a large bowl, beat butter until creamy. Gradually add powdered sugar, coconut milk, and vanilla extract. Beat until smooth and fluffy.

Serving

  • Place one cake layer on a serving plate. Spread a layer of frosting on top, then place the second cake layer on top. Cover the entire cake with the remaining frosting.
