Coconut Frosting

  • 1/2 cup coconut butter
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, beating well after each addition. Stir in the lemon zest and vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Mix until just combined, being careful not to overmix.
  • Pour the batter into a greased and floured 9-inch round cake pan. Smooth the top with a spatula. Bake in a preheated 350°F oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  • In a bowl, beat the coconut butter until creamy. Gradually add the powdered sugar and vanilla extract, mixing until smooth and fluffy.
  • Spread the frosting evenly over the cooled cake. Decorate with toasted coconut flakes or lemon slices as desired.
