Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan to ensure the cake doesn't stick.
  • If using fresh peaches, peel and slice them. Toss them with sugar and lemon juice in a mixing bowl. Set aside while you prepare the batter.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and cinnamon. Gradually add this to the wet mixture, alternating with milk, and mix until just combined.
  • Layer the prepared peaches evenly at the bottom of the cake pan. Pour the cake batter over the peaches and spread evenly.
  • Place the cake in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan on a wire rack for 10 minutes before inverting onto a serving plate.
