Preparation

  • Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans. Cream together the butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla. In another bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet, alternating with milk. Fold in mixed berries gently.
  • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • Beat cream cheese until smooth. Gradually add powdered sugar and lemon juice, mixing until light and fluffy. Adjust the consistency by adding more sugar or a splash of milk if needed.
  • Place one cake layer on a serving plate. Spread with frosting and a layer of berries. Top with the second layer and repeat. Finish with frosting on top and sides, decorating with remaining berries.

Serving

  • Chill the cake for at least an hour before slicing for cleaner cuts. Serve each slice with additional berries or a dollop of whipped cream if desired.
