Cobbler Topping

  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter melted
  • 1/4 cup milk

Instructions
 

Preparation

  • Preheat your oven to 375°F and grease a 9-inch round cake pan.
  • In a large mixing bowl, combine the pitted cherries with sugar, cornstarch, and vanilla extract. Mix well to coat the cherries evenly.
  • In another bowl, whisk together the flour, sugar, and baking powder. Stir in the melted butter and milk until a thick batter forms.
  • Pour the cherry mixture into the prepared cake pan. Drop spoonfuls of the batter over the cherries, covering most of the surface.
  • Place the pan in the preheated oven and bake for about 50 minutes or until the topping is golden brown and the cherries are bubbling.
  • Allow the cobbler to cool for at least 10 minutes before serving to let the juices thicken slightly.
