Blackberry Frosting

  • 2 cups powdered sugar
  • 1/4 cup blackberry puree
  • 1/2 tsp vanilla extract

Instructions
 

Preparation

  • Preheat the oven to 350°F. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Fold in the blackberries gently to prevent them from breaking apart.
  • Spoon the batter into the prepared cupcake tin, filling each liner about two-thirds full. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Serving

  • Let the cupcakes cool completely on a wire rack before frosting. Use a piping bag to frost each cupcake with the blackberry frosting. Top with a fresh blackberry for garnish, if desired.
