Ingredients
  

Peach Filling

  • 2 cups fresh peaches peeled and sliced
  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Crisp Topping

  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter cold and cubed

Instructions
 

Preparation

  • Peel and slice the peaches. In a medium bowl, combine peaches with sugar and cinnamon. Stir until well coated and let sit while preparing the topping.
  • In another bowl, mix rolled oats, flour, and brown sugar. Add cold, cubed butter and mix until the mixture resembles coarse crumbs.
  • Divide the peach mixture evenly among ramekins. Top with the oat mixture, spreading evenly over the peaches.
  • Place ramekins on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the peaches are bubbly.
  • Remove from oven and let cool slightly before serving.

Serving

  • Serve warm, optionally with a scoop of vanilla ice cream or whipped cream.

Storage

  • Allow crisps to cool completely, then cover and store in the refrigerator for up to 3 days. Reheat in the oven before serving.
