Preparation

  • Preheat the oven to 350°F and line a cupcake tray with paper liners. Gather all ingredients.
  • In a medium bowl, whisk together the flour, baking powder, ground cinnamon, and salt.
  • In a large mixing bowl, cream the softened butter and sugar using an electric mixer until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with horchata. Mix until just combined.
  • Spoon the batter into the prepared cupcake liners, filling each two-thirds full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let them cool.
  • Beat together the softened butter, powdered sugar, ground cinnamon, and horchata until smooth and creamy.
