Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup almond flour

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 cup honey
  • 1 cup buttermilk

Honey Frosting

  • 1 cup unsalted butter softened
  • 3 cups confectioners' sugar
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and almond flour. Set aside.
  • In another large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract, almond extract, and honey.
  • Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Begin and end with dry ingredients. Mix until just combined.
  • Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • In a mixing bowl, beat the softened butter until creamy. Gradually add confectioners' sugar, honey, vanilla extract, and salt. Beat until the frosting is light and fluffy.

Serving

  • Place one cake layer on a serving plate. Spread a layer of honey frosting over the top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  • Optionally, decorate the top of the cake with sliced almonds or a drizzle of honey.

Storage

  • Store the cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week.
